Mama Kat's pretty much famous writers workshop...

Writers Workshop.  My choice for this week is What's for Dinner.  My house tends to be an unscheduled diner. I don't do pasta as much as I use to.  My pasta boy doesn't live here anymore, or not often anyway.  So menu's around here are pretty boring.  One of my favorite summer pasta dishes, made on those evenings when the potato kid is working late, is as follows.  It's best made with garden tomatoes, if you don't have any in your garden, hit your neighbors up, sometimes they are tired of having so many ripen all at the same time.

Mix the following in a large bowl:

3cloves of garlic, minced
1 bunch of green onions, chopped
3 or 4 very ripe tomatoes, chopped, I don't seed, but I do peel them.
3 tbsps. olive oil
2 tbsps. chopped basil
1 cup mozzarella, cut into 1 inch cubes
salt and pepper to taste.
set aside:

Now put a pot of water on to boil for your favorite pasta.  I usually use a fusilli, but it is also really good with a mushroom tortellini, or angel hair pasta. OR great with cooked rice.

The warm pasta/rice gets combined with the tomato/basil mixture, the cheese melts with the warmth of the pasta/rice.  Great with any meat/fish.  BUT also pretty good cold leftover for the next day.  I particularly enjoy it with my leftover salmon or poached chicken breast.  Sometimes you need to add a little extra tomato to wet things up. My niece likes to sprinkle Parmesan cheese as well. But yummy any way.



P.S.  since I can my own tomatoes, I make sure to do some just as diced and I do use them in the colder months when my neighbors no longer have an abundant crop.

Sounds very nice Irene. Nice to hear there are other houses where the meals menu is less than exciting!

Once my tomatoes start to ripe en mass I'm going to have to try this. I never met a pasta dish I didn't like!

Tomatoes are growing slow this year - I'm only getting enough for salads and slicing. Must be the mild temperatures this summer.
